What ARE Congo Bars Anyway??

I've mentioned these before on my blog. I don't know if they are a regional thing or just a family thing. ::grin:: However, I made these twice last week & remembered to grab my camera for some photos. So here is the recipe - enjoy - they are VERY yummy!!!!

2/3 cup oil (or shortening - I use oil)
2 cups brown sugar
1 cup chocolate bits
3 eggs
1 teaspoon vanilla

Mix well together in a large bowl.

2-1/2 cups flour
1/2 teaspoon of salt
2-1/2 teaspoons of baking powder

Mix in a small bowl & then add to the wet mixture. Mix well.

Grease a 9x13 pan. Add mixture. Bake at 350 degrees for about 20-25 minutes. The lighter they are when they come out, the more gooey they will be.

Cut & enjoy!!!

  1. LOL, that's exactly what I was thinking, WHAT are Congo Bars?! Thanks for posting, the recipe looks similar to chocolate chip pan cookies?

  2. Congo bars really are a regional thing, I think. We used to get ALL EXCITED when they showed up on the SCHOOL LUNCH MENU!!!!

Kristine - they are sort of like pan cookies, but better!!!!

Thanks for sharing the recipe, Lisa...I'm adding it to my collection of "stuff I'll probably never get around to making", lol!

  3. These look really good! I just wanted to say that I love reading your blog. I haven't had much time for commenting lately but I do read. I really liked your post on all the groups you belong to. I'll definitely read that one again sometime soon.

  4. Thanks for sharing the recipe. I'll be sure to try these very soon!

Oh thank goodness! I'm not here all alone. Thanks for leaving me a comment. It helps that I'm not always talking to myself. Right? Hello?
