What ARE Congo Bars Anyway??

I've mentioned these before on my blog. I don't know if they are a regional thing or just a family thing. ::grin:: However, I made these twice last week & remembered to grab my camera for some photos. So here is the recipe - enjoy - they are VERY yummy!!!!

2/3 cup oil (or shortening - I use oil)
2 cups brown sugar
1 cup chocolate bits
3 eggs
1 teaspoon vanilla

Mix well together in a large bowl.



2-1/2 cups flour
1/2 teaspoon of salt
2-1/2 teaspoons of baking powder

Mix in a small bowl & then add to the wet mixture. Mix well.



Grease a 9x13 pan. Add mixture. Bake at 350 degrees for about 20-25 minutes. The lighter they are when they come out, the more gooey they will be.



Cut & enjoy!!!

  2. Congo bars really are a regional thing, I think. We used to get ALL EXCITED when they showed up on the SCHOOL LUNCH MENU!!!!

    Kristine - they are sort of like pan cookies, but better!!!!
